Rice Paper Sail Tutorial

Rice paper sails are a popular cake decorating technique that transforms simple cakes into show-stopper cakes. Rice paper sails gained huge popularity on Instagram during 2020.


What cakes can rice paper sails be placed on?


Rice paper sails can be placed on fondant, buttercream, ganache-covered and fresh cream cakes! The sails are attached to a fresh cream cake in the image above for a mother's day cake.


Where can I buy rice paper from?


Rice paper can be found at most Asian grocery stores and online, including Amazon. They are traditionally used to make spring rolls, they are kept outside in a cool, dry area.



Ingredients

Rice paper (aka spring roll wrappers)

2 cups of warm water

Water-based or gel food colouring


Equipment

Large bowl

Silicone mat

Elastic-bands or pegs

Spoon


Method:

  1. Pour warm water into a bowl and mix in food colouring

  2. Scrunch silicone mat on either sides to create ruffles/waves and secure with elastic-bands or pegs. If you have a silicone mat to create chocolate spheres you can use this mat instead and skip this part.

  3. Place one sheet on rice paper into the bowl and saturate until the rice paper become extremely flimsy (1-2 minutes)

  4. Take the saturated rice paper out of the bowl and hold above the bowl to drain excess water

  5. Place onto to the silicone mat and shape to create waves

  6. Leave to dry for 24-hours until 'crisp'
